Kick Ass Cannelloni with a Dash of Red*

Our daughter kept asking me to make Italian Cannelloni. I felt a sting of blushing guilt but said nothing. I had pulled a well-deserved Swifty on her a few months earlier, cooking up a storm before she arrived home, all packaging evidence hidden in the outside bin. The cannelloni had been simple to make with blended organic Tofu - Yes, That Tofu! - fresh spinach, cashews, lime juice, hummus, onion, garlic, cumin, garam masala, parsley, oregano, nutritional yeast, hemp plant milk, maple syrup and maybe two chickpeas. I marinated the herbed-up tomatoes for the sauce in half a cup of red wine and made the topping separately with one slice of blended sour dough bread, walnuts and more nutritional yeast (with a tiny pinch of mustard powder).

If she had known the ingredients used, well, we won't even go There. One doesn't get to win many, if any, debates (or battles!) with a teenager so I smugly held my smiling secret close to my heart for months. In fact, the truth is, I never wanted to utter a word about The Kitchen Process. Some things are best left unsaid! Through. Peaceful. Creations.

Pic below represents our daughter's freedom in this life time. Have we given her too much? Most probably, Yes. But we can't change those decisions now, nor would we want to. She has an inquisitive artistic and generous soul. Intelligent with the Face of an Angel! A Sweet Miracle of Creation. No. Control. Freaks. At. Our. Place. We. Hope.

My friend George enjoys the cannelloni recipe and is helping me write and finish a cook book which may be called The L&G Do-It-Yourself Book of Dynamics between Spirits and Real Food. He understands the connection of body based healing through Dinner. One of my other recipes that people like is garlic mushrooms made with hemp milk, nutritional yeast, scallion and parsley. We have the mushrooms on toast, or as a side dish with cannelloni. Also a roasted pumpkin and pine nut salad with balsamic vinegar, Dijon mustard, allspice and juice from a small Mandarin orange.
